Beef Kebab with Harissa Sauce

Juicy grilled ground beef kebabs, served with spicy Moroccan chili paste sauce.


1 pound 93/7 ground beef
1 egg
1 medium yellow onion, finely chopped
2 garlic cloves, minced
1 T extra virgin olive oil
2 T parsley, finely chopped
2 T cilantro, finely chopped
2 T tomato paste
1/4 cup Harissa paste
2 T honey
2 T lemon juice
2 T extra virgin olive oil
As needed ground pepper and kosher salt
As needed 6-inch bamboo skewer


Sauté onion in 1 T olive oil over medium heat until soft, add garlic and cook for one minute, set aside to cool.

Thoroughly mix beef, egg, parsley, cilantro, tomato paste, onion, garlic, salt and pepper.

Form 3-inch long, 1-inch wide kebabs on skewers and grill over medium flame, or bake on a sheet tray at 400° F, until beef reaches an internal temperature of 160° F.

For sauce, mix Harissa paste, honey, lemon juice, olive oil, and salt and pepper to taste.
