Beef and Vegetable Stir Fry
A simple stir-fry with ground sirloin and plenty of fresh vegetable flavors.

1-1/2 lbs ground sirloin
1 medium white onion, diced
1 T olive oil
2 cans (14.5 oz ea) French-cut green beans, drained
12 oz sliced mushrooms (canned or jarred), drained
1 can (14.5 oz) stewed tomatoes, drained
Salt and black pepper, to taste
Brown ground beef in a medium pan until it reaches an internal temperature of 160° F on a meat thermometer.
Drain fat and set meat aside.
In the same pan, brown onion for about 3 minutes in olive oil.
Add drained vegetables to onion and heat for about 2 minutes.
Add beef to vegetable mixture and heat for about 2 minutes.
Move all ingredients to a serving dish, salt and pepper to taste and serve 1/2 cup of beef mixture with 1/2 cup of brown rice.
