Bottomless Shepherd’s Pie

Cheese, corn, potatoes and cream of mushroom soup come together to make this comforting casserole.

Ingredients

1 lb 93/7 or ground sirloin ground beef
1 small onion, chopped
1 can (10-3/4 oz) cream of mushroom soup
1 can (16 oz) corn, drained
2 cups shredded Cheddar cheese
3 cups prepared instant mashed potatoes
Salt and pepper

Directions

Preheat oven to 375° F.

Brown ground beef with onion in large nonstick skillet until internal temperature of beef reaches 160° F on a meat thermometer. Drain.

In a 9-by-13-inch baking dish, spread ground beef in even layer on bottom.

Then spread cream of mushroom soup followed by corn.

Top with cheese and then mashed potatoes.

Sprinkle salt and pepper on top and bake for 20 minutes or until golden brown.
