Southwestern Meatballs

Rich and delicious bacon-wrapped and cheddar-stuffed meatballs, served with jalapeno jam.

Ingredients

1 pound 93/7 ground beef
2 eggs
1 T Kosher salt
1 tsp black pepper
1 tsp granulated garlic
1 tsp granulated onion
1 cup cheddar cheese, cut into 1/8-inch cubes
8 turkey bacon strips, thinly sliced, cut in half
12 jalapeno peppers, seeded and deveined
1/4 cup apple cider vinegar
1/2 cup honey
As needed toothpicks or 6-inch bamboo skewers

 

Directions

Thoroughly mix ground beef, eggs, salt, pepper, granulated garlic and onion and cheddar cheese.

Roll 2-inch diameter meatballs, wrap with bacon and secure with a toothpick/skewer.

Bake meatballs on a sheet pan at 375° F for 20 minutes until golden brown and the centers are fully cooked to 160° F.

Blend jalapeno peppers with honey and vinegar, transfer to a sauce pot and simmer until a jam-like consistency is reached.
