Extra Thick Brown Sugar Meatloaf

2 lbs ground chuck
2 eggs
3/4 cup finely crushed saltines
3/4 cup milk
1 onion, chopped
1-1/2 tsp salt
1/2 tsp ground black pepper
1/4 tsp ground ginger
3/4 cup packed brown sugar
3/4 cup ketchup
Preheat oven to 350° F.
In a large bowl, combine ground beef, eggs, saltines, milk and onion.
Add salt, pepper and ginger. Mix well, shape into a loaf and place in a greased 5-by-9-inch loaf pan.
Mix brown sugar and ketchup to create glaze.
Top meatloaf with half of glaze.
Bake for 30 minutes.
Remove from oven and top with remaining glaze.
Bake for 30 minutes more or until internal temperature of meatloaf reaches 160° F on a meat thermometer.
